This wine is obtained from vines grown on the hills around Siena, where they are planted with a high
density. Cultivation features careful canopy management and drastic thinning of the bunches of grapes.
The maximum yield reached is 700 to 800 grams
per stem. The grapes are hand-picked and placed in crates
in which they are sent immediately to cellars where
they undergo strict selection both of the bunches
and of the single grapes, on two selection conveyors.
The drawn off wine is immediately transferred
to French oakwood barriques to undergo malo-lactic fermentation. Upon completion of this stage,
the wine is blended and placed back into barriques
to mature for another year. After bottling the wine
undergoes 12 to 18 months of ageing.
